Ingredients

  • Cauliflower - 300 grams, grated

  • Coconut aminos - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red bell pepper - 1/2, diced
  • Carrot - 1 small, grated
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 220°C (430°F).
  2. In a large bowl, combine the grated cauliflower, egg, salt, and pepper to form a dough-like mixture.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  5. While the crust is baking, heat the olive oil in a skillet over medium heat, then add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  6. Add the shrimp to the skillet, cooking for 3-4 minutes until they turn pink and opaque. Stir in the red bell pepper and grated carrot, cooking for an additional 2 minutes.
  7. Pour the coconut aminos over the shrimp mixture and stir well to combine, then remove from heat.
  8. Once the crust is done, remove it from the oven and evenly distribute the shrimp mixture over the top.
