- Cauliflower - 250 grams, grated
- Almond flour - 50 grams
- Egg - 1 large
- Green onions - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - for frying
Steps
- In a food processor, combine the shrimp, garlic, ginger, green onions, coconut aminos, sesame oil, salt, and black pepper. Pulse until the mixture is finely chopped but not pureed.
- In a large mixing bowl, combine the grated cauliflower, almond flour, and egg. Mix until a dough forms.
- Divide the dough into small balls, then flatten each ball into a disc about 10 cm in diameter.
- Place a spoonful of the shrimp mixture in the center of each disc. Fold the edges over to form a half-moon shape and pinch to seal.
- Heat coconut oil in a non-stick skillet over medium heat. Add the dumplings and fry for about 3-4 minutes on each side, or until golden brown and cooked through.
