Ingredients

  • Chicken breast - 300 grams, diced
  • Cauliflower - 1 medium head (about 400 grams), riced
  • Egg - 1 large, beaten
  • Almond flour - 50 grams
  • Sesame oil - 2 tablespoons
  • Coconut aminos - 3 tablespoons
  • Honey - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Start by making the cauliflower crust: Steam the riced cauliflower for about 5 minutes until tender, then drain and let it cool.
  3. In a mixing bowl, combine the cooled riced cauliflower, almond flour, beaten egg, salt, and pepper. Mix well until a dough forms.
  4. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza shape about 1/2 inch thick.
  5. Bake the crust for 15-20 minutes, or until golden brown and firm.
  6. While the crust is baking, prepare the sesame chicken: In a large skillet, heat the sesame oil over medium heat.
  7. Add diced chicken to the skillet and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is cooked through and lightly browned.
  8. Stir in the minced garlic, grated ginger, coconut aminos, and honey. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  9. Once the crust is done, remove it from the oven and spread the chicken mixture evenly on top.
  10. Sprinkle with chopped green onions and sesame seeds, then return to the oven for another 5 minutes.
  11. Remove from the oven, slice, and serve hot.
