Ingredients
- Chicken breast - 300 grams, diced
- Cauliflower - 1 medium head (about 400 grams), riced
- Egg - 1 large, beaten
- Almond flour - 50 grams
- Sesame oil - 2 tablespoons
- Coconut aminos - 3 tablespoons
- Honey - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Sesame seeds - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- Start by making the cauliflower crust: Steam the riced cauliflower for about 5 minutes until tender, then drain and let it cool.
- In a mixing bowl, combine the cooled riced cauliflower, almond flour, beaten egg, salt, and pepper. Mix well until a dough forms.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza shape about 1/2 inch thick.
- Bake the crust for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, prepare the sesame chicken: In a large skillet, heat the sesame oil over medium heat.
- Add diced chicken to the skillet and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is cooked through and lightly browned.
- Stir in the minced garlic, grated ginger, coconut aminos, and honey. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- Once the crust is done, remove it from the oven and spread the chicken mixture evenly on top.
- Sprinkle with chopped green onions and sesame seeds, then return to the oven for another 5 minutes.
- Remove from the oven, slice, and serve hot.
