Ingredients
- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Salt - 1/2 teaspoon
- Water - 1/3 cup
- Scallions - 1/4 cup, finely chopped
- Coconut oil - 2 tablespoons (for frying)
- Garlic powder - 1/4 teaspoon (optional)
- Sesame oil - 1 teaspoon (for flavor)
Steps
- In a mixing bowl, combine almond flour, coconut flour, and salt. Mix well.
- Gradually add water to the dry ingredients while stirring until a dough forms.
- Knead the dough gently for about 2 minutes until smooth, then let it rest for 10 minutes.
- Divide the dough into two equal portions and roll each portion into a thin circle (about 1/4 inch thick) on a lightly floured surface.
- Sprinkle chopped scallions and garlic powder (if using) evenly over the surface of each circle.
- Roll each circle tightly into a log, then coil the log into a spiral shape, tucking the end underneath.
- Flatten the spiral gently with your hands to form a pancake shape.
- Heat 1 tablespoon of coconut oil in a skillet over medium heat. Once hot, place one pancake in the skillet.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the second pancake, adding more oil if needed.
- Drizzle sesame oil over the pancakes before serving for added flavor. Slice into wedges and enjoy!
