Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Water - 1/3 cup
  • Scallions - 1/4 cup, finely chopped
  • Coconut oil - 2 tablespoons (for frying)
  • Garlic powder - 1/4 teaspoon (optional)
  • Sesame oil - 1 teaspoon (for flavor)

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, and salt. Mix well.
  2. Gradually add water to the dry ingredients while stirring until a dough forms.
  3. Knead the dough gently for about 2 minutes until smooth, then let it rest for 10 minutes.
  4. Divide the dough into two equal portions and roll each portion into a thin circle (about 1/4 inch thick) on a lightly floured surface.
  5. Sprinkle chopped scallions and garlic powder (if using) evenly over the surface of each circle.
  6. Roll each circle tightly into a log, then coil the log into a spiral shape, tucking the end underneath.
  7. Flatten the spiral gently with your hands to form a pancake shape.
  8. Heat 1 tablespoon of coconut oil in a skillet over medium heat. Once hot, place one pancake in the skillet.
  9. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the second pancake, adding more oil if needed.
  10. Drizzle sesame oil over the pancakes before serving for added flavor. Slice into wedges and enjoy!
