Steps
- In a mixing bowl, combine the almond flour, tapioca flour, and salt.
- Gradually add water to the dry ingredients, mixing until a smooth dough forms.
- Fold in the finely chopped scallions until evenly distributed throughout the dough.
- Divide the dough into two equal portions and shape each into a disc.
- Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
- Place one dough disc in the skillet and flatten it gently with the back of a spatula to about 1/4 inch thick.
- Cook for 3-4 minutes on one side until golden brown, then flip and cook the other side for another 3-4 minutes.
- Repeat the process with the second dough disc, adding the remaining tablespoon of coconut oil if needed.
- Remove the pancakes from the skillet and let them cool slightly before slicing into wedges and serving.
