Ingredients

  • Almond flour - 1 cup
  • Tapioca flour - 1/4 cup
  • Salt - 1/2 teaspoon
  • Water - 1/2 cup
  • Scallions (green onions) - 1/2 cup, finely chopped
  • Coconut oil - 2 tablespoons, for frying

Steps

  1. In a mixing bowl, combine the almond flour, tapioca flour, and salt.
  2. Gradually add water to the dry ingredients, mixing until a smooth dough forms.
  3. Fold in the finely chopped scallions until evenly distributed throughout the dough.
  4. Divide the dough into two equal portions and shape each into a disc.
  5. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
  6. Place one dough disc in the skillet and flatten it gently with the back of a spatula to about 1/4 inch thick.
  7. Cook for 3-4 minutes on one side until golden brown, then flip and cook the other side for another 3-4 minutes.
  8. Repeat the process with the second dough disc, adding the remaining tablespoon of coconut oil if needed.
  9. Remove the pancakes from the skillet and let them cool slightly before slicing into wedges and serving.
