Ingredients

  • Pork belly - 300 grams
  • Coconut flour - 100 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Ginger powder - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Green onions - 2 stalks, finely chopped
  • Red bell pepper - 1 small, diced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lettuce leaves - 4 large (for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Score the skin of the pork belly in a crosshatch pattern and season with salt and black pepper.
  3. Place the pork belly in a baking dish and roast in the oven for 45-50 minutes, until the skin is crispy and the meat is tender.
  4. While the pork belly is roasting, prepare the Paleo pizza base by mixing coconut flour, egg, garlic powder, ginger powder, and salt in a bowl until a dough forms.
  5. Roll out the dough between two sheets of parchment paper to about 1/2 cm thick, then cut into rounds using a cookie cutter or glass.
  6. Heat olive oil in a skillet over medium heat and cook the pizza rounds for about 2-3 minutes on each side until golden brown.
  7. Once the pork belly is done, let it rest for 10 minutes before slicing into thin pieces.
  8. Assemble the Paleo Pork Belly Buns by placing a slice of pork belly on each pizza base, topped with diced red bell pepper and chopped green onions.
  9. Serve the buns wrapped in lettuce leaves for a fresh, crunchy bite.
