Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Firm tofu - 200 grams, crumbled
  • Ground pork - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Sichuan peppercorns - 1/2 teaspoon, crushed
  • Doubanjiang (fermented broad bean paste) - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Cilantro - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Remove the leaves from the cauliflower and chop it into florets. Steam the florets for about 10 minutes until soft.
  3. In a food processor, blend the steamed cauliflower until it resembles rice, then transfer it to a clean cloth and squeeze out any excess moisture.
  4. In a bowl, combine the cauliflower rice, almond flour, egg, and salt. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust. Bake for 15 minutes or until golden brown.
  6. While the crust is baking, heat olive oil in a skillet over medium heat. Add the ground pork and cook until browned, about 5 minutes.
  7. Add minced garlic, ginger, and crushed Sichuan peppercorns to the skillet and cook for an additional 2 minutes.
  8. Stir in the crumbled tofu, doubanjiang, and coconut aminos. Cook for another 5 minutes until everything is heated through, stirring occasionally.
  9. Once the pizza crust is done, remove it from the oven and spread the tofu and pork mixture evenly over the top.
  10. Return the pizza to the oven and bake for another 10 minutes.
  11. Remove from the oven and garnish with chopped green onions and cilantro before slicing and serving.
