Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Firm tofu - 200 grams, crumbled
- Ground pork - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Sichuan peppercorns - 1/2 teaspoon, crushed
- Doubanjiang (fermented broad bean paste) - 1 tablespoon
- Coconut aminos - 1 tablespoon
- Green onions - 2 stalks, chopped
- Cilantro - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (390°F).
- Remove the leaves from the cauliflower and chop it into florets. Steam the florets for about 10 minutes until soft.
- In a food processor, blend the steamed cauliflower until it resembles rice, then transfer it to a clean cloth and squeeze out any excess moisture.
- In a bowl, combine the cauliflower rice, almond flour, egg, and salt. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust. Bake for 15 minutes or until golden brown.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add the ground pork and cook until browned, about 5 minutes.
- Add minced garlic, ginger, and crushed Sichuan peppercorns to the skillet and cook for an additional 2 minutes.
- Stir in the crumbled tofu, doubanjiang, and coconut aminos. Cook for another 5 minutes until everything is heated through, stirring occasionally.
- Once the pizza crust is done, remove it from the oven and spread the tofu and pork mixture evenly over the top.
- Return the pizza to the oven and bake for another 10 minutes.
- Remove from the oven and garnish with chopped green onions and cilantro before slicing and serving.
