Ingredients

  • Firm tofu - 250 grams
  • Ground pork (or chicken) - 100 grams
  • Coconut aminos - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Green onions, chopped - 2 tablespoons
  • Cauliflower rice - 200 grams
  • Coconut oil - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Almond flour - 50 grams

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet over medium heat, melt the coconut oil and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the ground pork (or chicken) to the skillet, cooking until browned and fully cooked, about 5-7 minutes.
  4. Crumble the firm tofu into the skillet and gently mix with the meat, cooking for an additional 3-4 minutes.
  5. Stir in the coconut aminos, red chili flakes, salt, and pepper, and cook for another 2 minutes, allowing the flavors to meld.
  6. In a separate bowl, mix the cauliflower rice with almond flour, sesame oil, and a pinch of salt to create the pizza crust mixture.
  7. On a baking sheet lined with parchment paper, spread the cauliflower mixture into a round shape, about 1 cm thick.
  8. Bake the crust in the preheated oven for 15-20 minutes until golden brown and slightly crispy.
  9. Remove the crust from the oven and spoon the Mapo Tofu mixture evenly over the top.
  10. Return the dish to the oven for an additional 5-7 minutes to heat through.
  11. Garnish with chopped green onions before serving.
