Ingredients
- Firm tofu - 250 grams
- Ground pork (or chicken) - 100 grams
- Coconut aminos - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Red chili flakes - 1 teaspoon (adjust to taste)
- Green onions, chopped - 2 tablespoons
- Cauliflower rice - 200 grams
- Coconut oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Almond flour - 50 grams
Steps
- Preheat the oven to 200°C (390°F).
- In a skillet over medium heat, melt the coconut oil and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the ground pork (or chicken) to the skillet, cooking until browned and fully cooked, about 5-7 minutes.
- Crumble the firm tofu into the skillet and gently mix with the meat, cooking for an additional 3-4 minutes.
- Stir in the coconut aminos, red chili flakes, salt, and pepper, and cook for another 2 minutes, allowing the flavors to meld.
- In a separate bowl, mix the cauliflower rice with almond flour, sesame oil, and a pinch of salt to create the pizza crust mixture.
- On a baking sheet lined with parchment paper, spread the cauliflower mixture into a round shape, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden brown and slightly crispy.
- Remove the crust from the oven and spoon the Mapo Tofu mixture evenly over the top.
- Return the dish to the oven for an additional 5-7 minutes to heat through.
- Garnish with chopped green onions before serving.
