Ingredients

  • Lotus root - 300 grams, peeled and thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Coconut aminos - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced lotus root with 1 tablespoon of olive oil, salt, and pepper, tossing to coat evenly.
  3. Arrange the lotus root slices in a single layer on a baking sheet lined with parchment paper, and bake for 15 minutes until they start to crisp.
  4. While the lotus root is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat and add minced garlic, cooking until fragrant (about 1 minute).
  5. Add the diced red bell pepper and sliced mushrooms to the skillet, sautéing for about 5 minutes until softened.
  6. Stir in the fresh spinach and coconut aminos, cooking until the spinach wilts (about 2 minutes).
  7. Remove the lotus root from the oven and spread the sautéed vegetable mixture evenly over the top.
  8. Sprinkle dried oregano and nutritional yeast (if using) over the vegetables.
  9. Return the pizza to the oven for an additional 10 minutes until the edges of the lotus root are crispy.
  10. Remove from the oven, let cool slightly, slice, and serve warm.
