Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 400 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Lemon juice - 3 tablespoons
  • Lemon zest - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Ginger powder - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Green onions - 2 stalks, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes.
  3. Once cooked, let the cauliflower cool for a few minutes, then blend it in a food processor until it resembles rice.
  4. Place the cauliflower rice in a clean kitchen towel and squeeze out excess moisture.
  5. In a bowl, mix the cauliflower rice with almond flour, egg, salt, and pepper until well combined to form the crust.
  6. Spread the mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  8. While the crust is baking, cut the chicken breast into bite-sized pieces.
  9. In a bowl, combine lemon juice, lemon zest, garlic powder, ginger powder, coconut aminos, olive oil, salt, and pepper to create the marinade.
  10. Add the chicken pieces to the marinade and let them sit for at least 10 minutes.
  11. In a skillet over medium heat, cook the marinated chicken for about 8-10 minutes until fully cooked and golden brown.
  12. Once the crust is ready, remove it from the oven and top it with the cooked lemon chicken and chopped green onions.
  13. Return the pizza to the oven for an additional 5 minutes to heat through.
