- Almond flour - 50 grams
- Egg - 1 large
- Lemon juice - 3 tablespoons
- Lemon zest - 1 teaspoon
- Garlic powder - 1 teaspoon
- Ginger powder - 1 teaspoon
- Coconut aminos - 2 tablespoons
- Olive oil - 2 tablespoons
- Green onions - 2 stalks, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes.
- Once cooked, let the cauliflower cool for a few minutes, then blend it in a food processor until it resembles rice.
- Place the cauliflower rice in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower rice with almond flour, egg, salt, and pepper until well combined to form the crust.
- Spread the mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 20 minutes or until golden brown.
- While the crust is baking, cut the chicken breast into bite-sized pieces.
- In a bowl, combine lemon juice, lemon zest, garlic powder, ginger powder, coconut aminos, olive oil, salt, and pepper to create the marinade.
- Add the chicken pieces to the marinade and let them sit for at least 10 minutes.
- In a skillet over medium heat, cook the marinated chicken for about 8-10 minutes until fully cooked and golden brown.
- Once the crust is ready, remove it from the oven and top it with the cooked lemon chicken and chopped green onions.
- Return the pizza to the oven for an additional 5 minutes to heat through.
- Slice and serve immediately.
