- 400g chicken breast - diced
- 1 cup cauliflower rice
- 1/2 cup bell peppers - diced
- 1/2 cup zucchini - diced
- 1/4 cup green onions - sliced
- 2 cloves garlic - minced
- 1 tablespoon ginger - minced
- 2 tablespoons coconut aminos
- 1 tablespoon almond butter
- 1 tablespoon apple cider vinegar
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes
- 1/4 cup roasted peanuts - chopped

Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Prepare the cauliflower rice by grating cauliflower florets or using a food processor until it resembles rice.
- Spread the cauliflower rice on the baking sheet and bake for 15 minutes until slightly crispy.
- In a large skillet, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
- Add the diced chicken to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Stir in the bell peppers and zucchini, cooking until tender, about 3-4 minutes.
- In a small bowl, whisk together coconut aminos, almond butter, apple cider vinegar, and red pepper flakes. Pour the sauce over the chicken and vegetables, stirring to combine and heat through for another 2-3 minutes.
- Remove the cauliflower crust from the oven and spoon the Kung Pao Chicken mixture over it.
- Top with chopped green onions and roasted peanuts before serving.
