Steps
- Preheat the oven to 220°C (425°F).
- To make the cauliflower crust, steam the cauliflower florets until soft, about 8-10 minutes. Drain and let cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the riced cauliflower, egg, almond flour, olive oil, salt, and pepper. Mix well until a dough forms.
- Press the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
- While the crust is baking, heat a skillet over medium heat. Add the sliced chicken, garlic, and coconut aminos, cooking until the chicken is browned and cooked through, about 5-7 minutes.
- Add the bell pepper, mushrooms, and zucchini to the skillet, stirring for another 3-5 minutes until the vegetables are tender.
- Remove the crust from the oven and top it with the chicken and vegetable mixture. Sprinkle with chopped green onions and fresh basil.
- Return the pizza to the oven for an additional 5-7 minutes to heat through. Serve hot.
