Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 1 tablespoon

  • Ground black pepper - 1/4 teaspoon
  • Chicken breast - 150 grams, thinly sliced
  • Red bell pepper - 1/2, sliced
  • Mushrooms - 100 grams, sliced
  • Zucchini - 1 small, sliced
  • Green onions - 2, chopped
  • Coconut aminos - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 220°C (425°F).
  2. To make the cauliflower crust, steam the cauliflower florets until soft, about 8-10 minutes. Drain and let cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a mixing bowl, combine the riced cauliflower, egg, almond flour, olive oil, salt, and pepper. Mix well until a dough forms.
  5. Press the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
  7. While the crust is baking, heat a skillet over medium heat. Add the sliced chicken, garlic, and coconut aminos, cooking until the chicken is browned and cooked through, about 5-7 minutes.
  8. Add the bell pepper, mushrooms, and zucchini to the skillet, stirring for another 3-5 minutes until the vegetables are tender.
  9. Remove the crust from the oven and top it with the chicken and vegetable mixture. Sprinkle with chopped green onions and fresh basil.
  10. Return the pizza to the oven for an additional 5-7 minutes to heat through. Serve hot.
