Ingredients

  • Cauliflower - 300 grams
  • Ground beef - 250 grams
  • Fresh ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Coconut aminos - 2 tablespoons
  • Green bell pepper - 50 grams, diced
  • Carrot - 50 grams, shredded
  • Coconut oil - 1 tablespoon
  • Egg - 1, beaten
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Remove the leaves from the cauliflower and cut it into florets. Steam the florets for about 10 minutes until tender.
  3. Once steamed, let the cauliflower cool slightly, then blend it in a food processor until it resembles rice or fine crumbs.
  4. Transfer the cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a bowl, combine the cauliflower, beaten egg, onion powder, salt, and pepper to form the crust mixture.
  6. Spread the mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  8. While the crust is baking, heat coconut oil in a skillet over medium-high heat. Add minced ginger and garlic, sautéing for about 1 minute until fragrant.
  9. Add ground beef to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
  10. Stir in coconut aminos, diced bell pepper, and shredded carrot, cooking for an additional 3-4 minutes until vegetables are tender.
  11. Once the crust is done, remove it from the oven and top it with the ginger beef mixture, spreading it evenly.
  12. Return the pizza to the oven and bake for an additional 5 minutes to heat through.
  13. Garnish with fresh cilantro before serving.
