Ingredients

  • Cauliflower - 400 grams (1 medium head, riced)
  • Chicken breast - 200 grams, diced
  • Carrot - 1 medium, finely diced
  • Green bell pepper - 1 medium, finely diced
  • Green onions - 2, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Eggs - 2, lightly beaten
  • Salt - to taste
  • Pepper - to taste
  • Sesame oil - 1 teaspoon (optional)

Steps

  1. Begin by ricing the cauliflower using a food processor or grater until it resembles grains of rice.
  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and cook for 5-7 minutes until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil. Add the minced garlic, grated ginger, diced carrot, and green bell pepper. Sauté for 3-4 minutes until the vegetables are tender.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix with the vegetables.
  5. Add the riced cauliflower to the skillet along with the cooked chicken, coconut aminos, and sliced green onions. Stir to combine and sauté for an additional 5-7 minutes until the cauliflower is tender and heated through.
  6. Season with salt, pepper, and sesame oil (if using) to taste before serving.
