Ingredients

  • Cauliflower - 1 medium head, riced (about 400g)
  • Egg - 1 large
  • Almond flour - 50g
  • Olive oil - 2 tablespoons
  • Chicken breast - 200g, diced
  • Chinese five-spice powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Green bell pepper - 1/2, sliced
  • Red onion - 1/2, thinly sliced
  • Carrot - 1 small, julienned
  • Coconut aminos - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rice the cauliflower by grating it or using a food processor until it resembles rice grains.
  3. Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
  4. In a bowl, combine the steamed cauliflower, almond flour, egg, olive oil, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a pizza crust. Bake in the preheated oven for 15-20 minutes until golden and firm.
  6. While the crust is baking, heat a skillet over medium heat. Add a tablespoon of olive oil, then sauté the minced garlic until fragrant.
  7. Add the diced chicken breast to the skillet, season with Chinese five-spice powder, salt, and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes.
  8. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell pepper, red onion, and carrot. Sauté for 3-4 minutes until the vegetables are tender.
  9. Spread the cooked chicken and sautéed vegetables over the baked cauliflower crust. Drizzle with coconut aminos.
  10. Return the pizza to the oven for an additional 5 minutes to heat through.
  11. Remove from the oven, garnish with fresh cilantro, slice, and serve.
