Ingredients
- Cauliflower - 1 medium head, riced (about 400g)
- Egg - 1 large
- Almond flour - 50g
- Olive oil - 2 tablespoons
- Chicken breast - 200g, diced
- Chinese five-spice powder - 1 teaspoon
- Garlic - 2 cloves, minced
- Green bell pepper - 1/2, sliced
- Red onion - 1/2, thinly sliced
- Carrot - 1 small, julienned
- Coconut aminos - 1 tablespoon
- Fresh cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- Rice the cauliflower by grating it or using a food processor until it resembles rice grains.
- Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
- In a bowl, combine the steamed cauliflower, almond flour, egg, olive oil, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a pizza crust. Bake in the preheated oven for 15-20 minutes until golden and firm.
- While the crust is baking, heat a skillet over medium heat. Add a tablespoon of olive oil, then sauté the minced garlic until fragrant.
- Add the diced chicken breast to the skillet, season with Chinese five-spice powder, salt, and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell pepper, red onion, and carrot. Sauté for 3-4 minutes until the vegetables are tender.
- Spread the cooked chicken and sautéed vegetables over the baked cauliflower crust. Drizzle with coconut aminos.
- Return the pizza to the oven for an additional 5 minutes to heat through.
- Remove from the oven, garnish with fresh cilantro, slice, and serve.
