Ingredients

  • Eggplant - 1 large
  • Ground chicken or turkey - 200 grams
  • Red bell pepper - 1, diced
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and arrange on a baking sheet.
  3. Drizzle the eggplant slices with olive oil and sprinkle with salt and pepper. Roast for 15 minutes until soft.
  4. While the eggplant is roasting, heat sesame oil in a skillet over medium heat.
  5. Add minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
  6. Add ground chicken or turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  7. Stir in diced red bell pepper and coconut aminos, cooking for an additional 3-4 minutes until the bell pepper is tender.
  8. Remove the skillet from heat and stir in chopped green onion and fresh basil.
  9. Once the eggplant is done roasting, remove it from the oven and top each slice with the meat and vegetable mixture.
  10. Return the topped eggplant to the oven and bake for an additional 5 minutes to heat through.
