Ingredients

  • Cauliflower - 300 grams
  • Ground pork - 200 grams
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red chili flakes - 1 teaspoon
  • Green onions - 2, chopped
  • Spinach - 100 grams, fresh
  • Almond flour - 50 grams
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. Transfer the cauliflower to a clean kitchen towel, twist, and squeeze to remove excess moisture.
  4. In a bowl, mix the cauliflower rice, almond flour, beaten egg, salt, and pepper until well combined.
  5. Spread the mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
  6. Bake in the preheated oven for 20 minutes, or until golden and crispy.
  7. While the crust bakes, heat sesame oil in a skillet over medium heat, then add garlic and ginger, cooking until fragrant.
  8. Add ground pork, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  9. Stir in coconut aminos and red chili flakes, and cook for another 2 minutes.
  10. Add fresh spinach to the skillet and stir until wilted, about 2 minutes.
  11. Once the crust is done, remove it from the oven and top with the pork mixture.
  12. Garnish with chopped green onions and cilantro, slice, and serve hot.
