Ingredients

  • Cauliflower - 300 grams (for crust)

  • Curry powder - 1 tablespoon
  • Coconut milk - 200 ml
  • Chicken breast - 200 grams, diced
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 small, sliced

  • Lime - 1, juiced

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Rice the cauliflower by cutting it into florets and pulsing it in a food processor until it resembles rice grains.
  3. Steam the riced cauliflower for about 5 minutes until tender, then let it cool.
  4. In a bowl, combine the cooled riced cauliflower, almond flour, egg, and salt to form a dough.
  5. Spread the cauliflower dough onto a baking sheet lined with parchment paper, shaping it into a round pizza crust.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
  7. While the crust is baking, heat coconut oil in a skillet over medium heat.
  8. Add diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  9. Stir in the sliced bell pepper and zucchini, cooking for an additional 3-4 minutes until softened.
  10. Add curry powder and coconut milk to the skillet, stirring to combine, and let it simmer for 5-10 minutes until the sauce thickens.
