Ingredients

  • Cauliflower - 400 grams
  • Chicken breast - 250 grams
  • Coconut flour - 50 grams
  • Eggs - 2 large
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2, chopped
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon for cooking

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes.
  3. Once cooked, drain the cauliflower and use a food processor to blend it into a rice-like consistency.
  4. In a large bowl, combine the processed cauliflower, coconut flour, eggs, salt, and pepper. Mix until a dough forms.
  5. Divide the dough into 4 equal portions and shape each into a flat circle about 1 cm thick.
  6. Place the circles on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden and firm.
  7. While the crusts are baking, heat olive oil in a skillet over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 1 minute.
  8. Add the chicken breast to the skillet, seasoning with coconut aminos, and cook until fully cooked, about 8-10 minutes. Shred the chicken using two forks.
  9. Stir in chopped green onions and sesame oil, mixing well. Remove from heat.
  10. Once the cauliflower crusts are done, remove from the oven and let cool slightly. Top each crust with shredded chicken mixture and fold over to create a bao shape.
  11. Serve warm, garnished with additional green onions if desired.
