- Duck legs - 2 pieces (about 500g)
- Coconut aminos - 4 tablespoons
- Rice vinegar - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Star anise - 1 whole
- Cinnamon stick - 1 small
- Chicken broth - 500ml
- Carrots - 1 medium, sliced
- Shiitake mushrooms - 100g, sliced
- Zucchini - 1 medium, spiralized
- Green onions - 2, sliced for garnish
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat sesame oil over medium heat. Season the duck legs with salt and black pepper, then brown them in the pot for about 5-7 minutes on each side until golden.
- Remove the duck legs and set aside. In the same pot, add minced ginger, garlic, star anise, and cinnamon stick, sautéing for 1-2 minutes until fragrant.
- Return the duck legs to the pot and pour in the chicken broth, coconut aminos, and rice vinegar. Bring to a simmer, cover, and reduce heat to low.
- Let the duck braise for about 60 minutes, turning occasionally, until the meat is tender and easily pulls away from the bone.
- After 60 minutes, add sliced carrots and shiitake mushrooms to the pot. Continue to braise for an additional 15 minutes.
- Remove the duck legs from the pot, shred the meat, and discard the bones. Return the shredded duck to the pot, stir to combine with the vegetables and broth.
- In a separate pan, briefly sauté spiralized zucchini for 2-3 minutes until just tender, then serve in bowls topped with the braised duck mixture.
- Garnish with sliced green onions before serving.
