Ingredients

  • Duck legs - 2 pieces (about 500g)
  • Coconut aminos - 4 tablespoons
  • Rice vinegar - 2 tablespoons
  • Ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Star anise - 1 whole
  • Cinnamon stick - 1 small
  • Chicken broth - 500ml
  • Carrots - 1 medium, sliced
  • Shiitake mushrooms - 100g, sliced
  • Zucchini - 1 medium, spiralized
  • Green onions - 2, sliced for garnish
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat sesame oil over medium heat. Season the duck legs with salt and black pepper, then brown them in the pot for about 5-7 minutes on each side until golden.
  2. Remove the duck legs and set aside. In the same pot, add minced ginger, garlic, star anise, and cinnamon stick, sautéing for 1-2 minutes until fragrant.
  3. Return the duck legs to the pot and pour in the chicken broth, coconut aminos, and rice vinegar. Bring to a simmer, cover, and reduce heat to low.
  4. Let the duck braise for about 60 minutes, turning occasionally, until the meat is tender and easily pulls away from the bone.
  5. After 60 minutes, add sliced carrots and shiitake mushrooms to the pot. Continue to braise for an additional 15 minutes.
  6. Remove the duck legs from the pot, shred the meat, and discard the bones. Return the shredded duck to the pot, stir to combine with the vegetables and broth.
  7. In a separate pan, briefly sauté spiralized zucchini for 2-3 minutes until just tender, then serve in bowls topped with the braised duck mixture.
  8. Garnish with sliced green onions before serving.
