- Chinese cabbage, shredded - 100 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Chicken or lamb broth - 750 ml
- Water - 500 ml
- Salt - to taste
- Black pepper - to taste
- Coriander, chopped - for garnish
Steps
- In a large pot, heat sesame oil over medium heat. Add minced garlic and sliced ginger, stirring until fragrant.
- Add the diced lamb shoulder to the pot and brown on all sides, about 5-7 minutes.
- Pour in the chicken or lamb broth and water, then bring to a boil. Reduce heat to low and simmer for 20 minutes.
- Stir in the soy sauce, salt, and black pepper. Add the julienned carrot and shredded Chinese cabbage, cooking for an additional 5 minutes.
- Cook the fresh egg noodles separately according to package instructions, then drain and set aside.
- To serve, place a portion of noodles in a bowl, ladle the hot soup over the noodles, and top with chopped spring onions and coriander.
