  • Rice noodles - 100 grams

  • Sesame oil - 1 tablespoon
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 small, thinly sliced
  • Spinach - 100 grams
  • Green onions - 2, chopped
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Fresh cilantro - a handful, for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  2. Pour in the vegetable broth and bring to a simmer. Add the soy sauce, carrots, bell pepper, and mushrooms. Let it cook for about 10 minutes until the vegetables are tender.
  3. While the broth is simmering, cook the rice noodles according to the package instructions, usually about 4-5 minutes. Drain and set aside.
  4. Add the spinach to the soup and cook for an additional 2 minutes until wilted.
  5. Divide the cooked noodles between two bowls and ladle the hot broth and vegetables over the noodles.
  6. Garnish with chopped green onions and fresh cilantro. Serve with lime wedges on the side for squeezing.
