  • Peanuts - 50 grams, roasted and roughly chopped
  • Soy Sauce - 30 ml
  • Sesame Oil - 15 ml
  • Rice Vinegar - 15 ml
  • Honey - 10 grams
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Chili Flakes - 1/4 teaspoon (optional)

Steps

  1. Cook the rice noodles according to package instructions, usually about 5-7 minutes. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, combine the chopped cucumber, julienned carrot, sliced red bell pepper, chopped green onions, and cilantro.
  3. In a small mixing bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and chili flakes (if using) to create the dressing.
