- Sesame Oil - 15 ml
- Rice Vinegar - 15 ml
- Honey - 10 grams
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Chili Flakes - 1/4 teaspoon (optional)
Steps
- Cook the rice noodles according to package instructions, usually about 5-7 minutes. Drain and rinse under cold water to stop cooking.
- In a large bowl, combine the chopped cucumber, julienned carrot, sliced red bell pepper, chopped green onions, and cilantro.
- In a small mixing bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and chili flakes (if using) to create the dressing.
