- Rice noodles - 150 grams

- Red bell pepper - 1 medium, thinly sliced
- Spring onions - 2, chopped
- Fresh coriander - 15 grams, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 teaspoon
- Garlic - 1 clove, minced
- Crushed red pepper flakes - 1/4 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Cook the rice noodles according to the package instructions, usually about 5-7 minutes, until tender. Drain and rinse under cold water to stop cooking and set aside.
- In a large mixing bowl, combine the cucumber, carrot, red bell pepper, spring onions, and fresh coriander.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, minced garlic, and crushed red pepper flakes until well combined.
- Add the cooked rice noodles to the bowl of vegetables and pour the dressing over the top. Toss everything together until the noodles and vegetables are well coated.
