Ingredients

  • Rice noodles - 150 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Spring onions - 2, chopped
  • Fresh coriander - 15 grams, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Garlic - 1 clove, minced
  • Crushed red pepper flakes - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Cook the rice noodles according to the package instructions, usually about 5-7 minutes, until tender. Drain and rinse under cold water to stop cooking and set aside.
  2. In a large mixing bowl, combine the cucumber, carrot, red bell pepper, spring onions, and fresh coriander.
  3. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, minced garlic, and crushed red pepper flakes until well combined.
  4. Add the cooked rice noodles to the bowl of vegetables and pour the dressing over the top. Toss everything together until the noodles and vegetables are well coated.
  5. Season with salt and black pepper to taste, and serve immediately, garnished with sesame seeds.
