- Beef broth - 500 ml
- Shredded cooked chicken - 150 g
- Mushrooms (shiitake or oyster) - 100 g, sliced
- Zucchini - 1 medium, spiralized
- Fresh ginger - 1 inch, sliced
- Garlic - 2 cloves, minced
- Soy sauce (or tamari for gluten-free) - 2 tbsp
- Fish sauce - 1 tsp
- Lime - 1, juiced
- Fresh cilantro - 1/4 cup, chopped
- Fresh basil - 1/4 cup, chopped
- Green onions - 2, sliced
- Chili flakes - to taste
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, heat the beef broth over medium heat.
- Add sliced ginger, minced garlic, and soy sauce to the broth and bring to a simmer.
- Stir in the sliced mushrooms and let them cook for about 5 minutes until tender.
- Add the shredded chicken and zucchini noodles to the pot, cooking for another 3-5 minutes until heated through.
- Stir in the fish sauce, lime juice, and season with salt, pepper, and chili flakes to taste.
- Remove from heat and ladle the soup into bowls.
- Garnish with fresh cilantro, basil, and green onions before serving.
