Ingredients

  • Beef broth - 500 ml
  • Shredded cooked chicken - 150 g
  • Mushrooms (shiitake or oyster) - 100 g, sliced
  • Zucchini - 1 medium, spiralized
  • Fresh ginger - 1 inch, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce (or tamari for gluten-free) - 2 tbsp
  • Fish sauce - 1 tsp
  • Lime - 1, juiced
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh basil - 1/4 cup, chopped
  • Green onions - 2, sliced
  • Chili flakes - to taste
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, heat the beef broth over medium heat.
  2. Add sliced ginger, minced garlic, and soy sauce to the broth and bring to a simmer.
  3. Stir in the sliced mushrooms and let them cook for about 5 minutes until tender.
  4. Add the shredded chicken and zucchini noodles to the pot, cooking for another 3-5 minutes until heated through.
  5. Stir in the fish sauce, lime juice, and season with salt, pepper, and chili flakes to taste.
  6. Remove from heat and ladle the soup into bowls.
  7. Garnish with fresh cilantro, basil, and green onions before serving.
