Ingredients

  • Beef chuck - 300 grams, cut into cubes
  • Zucchini - 2 medium, spiralized into noodles
  • Beef broth - 500 ml, low sodium
  • Ginger - 1 inch piece, sliced
  • Garlic - 3 cloves, minced
  • Star anise - 2 whole
  • Soy sauce (coconut aminos) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Cilantro - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat sesame oil over medium heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes.
  2. Add the sliced ginger, minced garlic, star anise, and a pinch of salt and pepper. Sauté for an additional 2 minutes until fragrant.
  3. Pour in the beef broth and coconut aminos. Bring the mixture to a boil, then reduce heat to low and let simmer for 30 minutes, covered.
  4. After 30 minutes, taste the broth and adjust seasoning with more salt or coconut aminos if needed.
  5. In the last 5 minutes of cooking, add the spiralized zucchini to the broth. Stir gently to combine and allow the zoodles to soften slightly.
  6. Serve the soup hot, garnished with chopped green onions and cilantro.
