Ingredients
- Beef chuck - 300 grams, cut into cubes
- Zucchini - 2 medium, spiralized into noodles
- Beef broth - 500 ml, low sodium
- Ginger - 1 inch piece, sliced
- Garlic - 3 cloves, minced
- Star anise - 2 whole
- Soy sauce (coconut aminos) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Cilantro - 1/4 cup, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat sesame oil over medium heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes.
- Add the sliced ginger, minced garlic, star anise, and a pinch of salt and pepper. Sauté for an additional 2 minutes until fragrant.
- Pour in the beef broth and coconut aminos. Bring the mixture to a boil, then reduce heat to low and let simmer for 30 minutes, covered.
- After 30 minutes, taste the broth and adjust seasoning with more salt or coconut aminos if needed.
- In the last 5 minutes of cooking, add the spiralized zucchini to the broth. Stir gently to combine and allow the zoodles to soften slightly.
- Serve the soup hot, garnished with chopped green onions and cilantro.
