- Lamb shank - 300 grams, cut into pieces
- Water - 1 liter
- Ginger - 20 grams, sliced
- Garlic - 4 cloves, smashed
- Star anise - 2 whole
- Cinnamon stick - 1 piece
- Chinese wolfberries (goji berries) - 30 grams
- Carrot - 1 medium, chopped
- Daikon radish - 100 grams, chopped
- Spring onions - 2, chopped
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - ½ teaspoon
- Soy sauce - 1 tablespoon
- Fresh coriander - for garnish
Steps
- In a large pot, add the lamb pieces and cover with 1 liter of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and skim off any foam that rises to the surface.
- Add the sliced ginger, smashed garlic, star anise, and cinnamon stick to the pot. Simmer for 1 hour, covered, until the lamb becomes tender.
- After an hour, add the chopped carrot, daikon radish, and goji berries. Continue to simmer for another 20 minutes.
- Season the soup with salt, black pepper, and soy sauce. Taste and adjust the seasoning if necessary.
- Serve hot, garnished with chopped spring onions and fresh coriander.
