Ingredients

  • Lamb shank - 300 grams, cut into pieces
  • Water - 1 liter
  • Ginger - 20 grams, sliced
  • Garlic - 4 cloves, smashed
  • Star anise - 2 whole
  • Cinnamon stick - 1 piece
  • Chinese wolfberries (goji berries) - 30 grams
  • Carrot - 1 medium, chopped
  • Daikon radish - 100 grams, chopped
  • Spring onions - 2, chopped
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - ½ teaspoon
  • Soy sauce - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. In a large pot, add the lamb pieces and cover with 1 liter of water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and skim off any foam that rises to the surface.
  3. Add the sliced ginger, smashed garlic, star anise, and cinnamon stick to the pot. Simmer for 1 hour, covered, until the lamb becomes tender.
  4. After an hour, add the chopped carrot, daikon radish, and goji berries. Continue to simmer for another 20 minutes.
  5. Season the soup with salt, black pepper, and soy sauce. Taste and adjust the seasoning if necessary.
  6. Serve hot, garnished with chopped spring onions and fresh coriander.
