  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes

  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon wedges - 2 (for serving)
  • Skewers (soaked in water if wooden) - 4

Steps

  1. In a mixing bowl, combine minced garlic, minced ginger, ground cumin, ground coriander, chili powder, soy sauce, sesame oil, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade and mix until well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
  5. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked through and slightly charred.
