Ingredients
- Lamb shoulder - 250 grams, cut into bite-sized pieces
- Basmati rice - 150 grams, rinsed
- Water - 300 ml
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and ginger, and cook for an additional 1-2 minutes until fragrant.
- Add the lamb pieces to the pan, cooking until browned on all sides, about 5-7 minutes.
- Sprinkle in the cumin seeds, coriander powder, turmeric powder, chili powder, salt, and black pepper. Stir well to coat the lamb evenly with the spices.
- Add the rinsed basmati rice to the pan, stirring to combine with the lamb and spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes before fluffing the rice with a fork.
- Serve warm, garnished with fresh cilantro.
