Ingredients

  • Lamb shoulder - 250 grams, cut into bite-sized pieces
  • Basmati rice - 150 grams, rinsed
  • Water - 300 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and ginger, and cook for an additional 1-2 minutes until fragrant.
  3. Add the lamb pieces to the pan, cooking until browned on all sides, about 5-7 minutes.
  4. Sprinkle in the cumin seeds, coriander powder, turmeric powder, chili powder, salt, and black pepper. Stir well to coat the lamb evenly with the spices.
  5. Add the rinsed basmati rice to the pan, stirring to combine with the lamb and spices.
  6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes before fluffing the rice with a fork.
  8. Serve warm, garnished with fresh cilantro.
