  • Lamb shoulder, diced - 300 grams
  • Fresh wheat noodles - 200 grams

  • Spring onions, chopped - 2 stalks
  • Chinese five-spice powder - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Beef or lamb stock - 500 ml
  • Chili flakes (optional) - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Coriander leaves, for garnish - a handful

Steps

  1. In a large pan, heat vegetable oil over medium heat. Add diced lamb and brown on all sides, about 5-7 minutes.
  2. Add minced garlic and ginger to the pan, cooking for another 2 minutes until fragrant.
  3. Stir in the Chinese five-spice powder, soy sauce, and black pepper, mixing well to coat the lamb.
  4. Pour in the beef or lamb stock, bring to a simmer, and let cook for 20 minutes until the lamb is tender.
  5. In a separate pot, cook the fresh wheat noodles according to package instructions, then drain and set aside.
  6. Once the lamb is tender, adjust seasoning with salt and chili flakes if desired, then stir in chopped spring onions.
  7. To serve, place a portion of noodles in a bowl, ladle the lamb and broth over the top, and garnish with coriander leaves.
