Ingredients

  • Sweet potato - 300 grams
  • Gluten-free all-purpose flour - 100 grams
  • Water - 80 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped green onions - 2 tablespoons
  • Shredded mozzarella cheese - 100 grams
  • Cooked minced pork (optional) - 50 grams
  • Sesame oil - 1 teaspoon

Steps

  1. Peel and cube the sweet potato, then steam until tender, about 15-20 minutes.
  2. In a mixing bowl, mash the steamed sweet potato and let it cool slightly.
  3. Add gluten-free flour, water, olive oil, salt, and black pepper to the mashed sweet potato. Mix until a dough forms.
  4. Knead the dough on a floured surface for a few minutes until smooth. Divide into two equal portions.
  5. Roll out each portion into a circle about 1 cm thick.
  6. Heat a non-stick skillet over medium heat and place one rolled-out dough in the skillet.
  7. Spread half of the shredded mozzarella cheese, cooked minced pork (if using), and chopped green onions on top of the dough.
  8. Cook for about 5-7 minutes until the bottom is golden brown. Carefully flip and cook the other side for another 5-7 minutes until golden and cheese is melted.
  9. Repeat the same process for the second dough portion.
  10. Drizzle with sesame oil before serving and enjoy!
