- Jasmine rice - 200 grams (cooked and cooled)
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves (minced)
- Shallots - 2 (thinly sliced)
- Carrot - 1 small (diced)
- Green peas - 50 grams (frozen or fresh)
- Egg - 2 (beaten)
- Soy sauce - 3 tablespoons (Halal)
- Kecap Manis - 1 tablespoon
- Sambal Oelek - 1 teaspoon (adjust to taste)
- Spring onions - 2 (chopped)
- Cucumber - 1/2 (sliced for garnish)
- Tomato - 1 (sliced for garnish)
- Salt - to taste
- Pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium heat.
- Add minced garlic and sliced shallots, sautéing until fragrant and golden brown.
- Add diced carrots and green peas to the pan, cooking for about 3-4 minutes until the vegetables are tender.
- Push the vegetable mixture to the side of the pan, add the remaining tablespoon of oil, and pour in the beaten eggs. Scramble the eggs until fully cooked.
- Combine the scrambled eggs with the vegetables, then add the cooked and cooled rice to the pan.
- Pour in the soy sauce, Kecap Manis, and Sambal Oelek, stirring well to evenly coat the rice and mix all ingredients.
- Cook for another 3-5 minutes, allowing the rice to fry slightly, and season with salt and pepper to taste.
- Remove from heat, stir in chopped spring onions, and serve hot with cucumber and tomato slices on the side.
