Ingredients

  • Jasmine rice - 200 grams (cooked and cooled)
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves (minced)
  • Shallots - 2 (thinly sliced)
  • Carrot - 1 small (diced)
  • Green peas - 50 grams (frozen or fresh)
  • Egg - 2 (beaten)
  • Soy sauce - 3 tablespoons (Halal)
  • Kecap Manis - 1 tablespoon
  • Sambal Oelek - 1 teaspoon (adjust to taste)
  • Spring onions - 2 (chopped)
  • Cucumber - 1/2 (sliced for garnish)
  • Tomato - 1 (sliced for garnish)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium heat.
  2. Add minced garlic and sliced shallots, sautéing until fragrant and golden brown.
  3. Add diced carrots and green peas to the pan, cooking for about 3-4 minutes until the vegetables are tender.
  4. Push the vegetable mixture to the side of the pan, add the remaining tablespoon of oil, and pour in the beaten eggs. Scramble the eggs until fully cooked.
  5. Combine the scrambled eggs with the vegetables, then add the cooked and cooled rice to the pan.
  6. Pour in the soy sauce, Kecap Manis, and Sambal Oelek, stirring well to evenly coat the rice and mix all ingredients.
  7. Cook for another 3-5 minutes, allowing the rice to fry slightly, and season with salt and pepper to taste.
  8. Remove from heat, stir in chopped spring onions, and serve hot with cucumber and tomato slices on the side.
