- Duck - 500 grams, whole
- Salt - 50 grams
- Star anise - 2 pieces
- Sichuan peppercorns - 1 teaspoon
- Ginger - 20 grams, sliced
- Garlic - 4 cloves, smashed
- Green onions - 2 stalks, chopped
- Shaoxing wine - 50 ml
- Water - 1 liter
Steps
- In a large pot, combine water, salt, Shaoxing wine, ginger, garlic, star anise, and Sichuan peppercorns. Bring the mixture to a boil.
- Once boiling, lower the heat and add the whole duck to the pot. Make sure the duck is fully submerged in the brine.
- Cover the pot and simmer for about 60 minutes, turning the duck halfway through to ensure even seasoning.
- After 60 minutes, turn off the heat and let the duck sit in the brine for an additional 30 minutes to absorb more flavor.
- Remove the duck from the pot and let it cool slightly before slicing.
- Serve the duck warm or chilled, garnished with chopped green onions.
