Ingredients

  • Duck - 500 grams, whole
  • Salt - 50 grams
  • Star anise - 2 pieces
  • Sichuan peppercorns - 1 teaspoon
  • Ginger - 20 grams, sliced
  • Garlic - 4 cloves, smashed
  • Green onions - 2 stalks, chopped
  • Shaoxing wine - 50 ml
  • Water - 1 liter

Steps

  1. In a large pot, combine water, salt, Shaoxing wine, ginger, garlic, star anise, and Sichuan peppercorns. Bring the mixture to a boil.
  2. Once boiling, lower the heat and add the whole duck to the pot. Make sure the duck is fully submerged in the brine.
  3. Cover the pot and simmer for about 60 minutes, turning the duck halfway through to ensure even seasoning.
  4. After 60 minutes, turn off the heat and let the duck sit in the brine for an additional 30 minutes to absorb more flavor.
  5. Remove the duck from the pot and let it cool slightly before slicing.
  6. Serve the duck warm or chilled, garnished with chopped green onions.
