- Firm tofu - 200 grams, cubed
- Fresh shiitake mushrooms - 100 grams, sliced
- Dried shiitake mushrooms - 10 grams, soaked in warm water
- Vegetable broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Spinach - 50 grams, fresh
- Salt - to taste
- Black pepper - to taste
- Cornstarch - 1 teaspoon, mixed with 2 teaspoons of water (optional for thickening)
Steps
- In a pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the fresh shiitake mushrooms and soaked dried shiitake mushrooms to the pot. Sauté for another 3-4 minutes until the mushrooms are tender.
- Pour in the vegetable broth and bring it to a gentle boil. Reduce the heat to low and let it simmer for 10 minutes.
- Add the cubed firm tofu and soy sauce to the soup, stirring gently to combine. Simmer for an additional 5 minutes.
- Stir in the fresh spinach and chopped green onions, cooking until the spinach is wilted, about 2 minutes.
- If you prefer a thicker soup, stir in the cornstarch mixture and cook for another 1-2 minutes until the soup thickens slightly.
- Season with salt and black pepper to taste before serving hot.
