Ingredients

  • Firm tofu - 200 grams, cubed
  • Fresh shiitake mushrooms - 100 grams, sliced
  • Dried shiitake mushrooms - 10 grams, soaked in warm water
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Spinach - 50 grams, fresh
  • Salt - to taste
  • Black pepper - to taste
  • Cornstarch - 1 teaspoon, mixed with 2 teaspoons of water (optional for thickening)

Steps

  1. In a pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the fresh shiitake mushrooms and soaked dried shiitake mushrooms to the pot. Sauté for another 3-4 minutes until the mushrooms are tender.
  3. Pour in the vegetable broth and bring it to a gentle boil. Reduce the heat to low and let it simmer for 10 minutes.
  4. Add the cubed firm tofu and soy sauce to the soup, stirring gently to combine. Simmer for an additional 5 minutes.
  5. Stir in the fresh spinach and chopped green onions, cooking until the spinach is wilted, about 2 minutes.
  6. If you prefer a thicker soup, stir in the cornstarch mixture and cook for another 1-2 minutes until the soup thickens slightly.
  7. Season with salt and black pepper to taste before serving hot.
