Ingredients

  • Shiitake mushrooms - 100 grams, chopped
  • Button mushrooms - 100 grams, chopped
  • Green bell pepper - 50 grams, finely diced
  • Carrot - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Rice paper wraps - 4 sheets
  • Coconut oil - for frying
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat 1 teaspoon of coconut oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant.
  2. Add chopped shiitake and button mushrooms to the skillet. Cook for 5-7 minutes until they release their moisture and start to brown.
  3. Stir in the diced green bell pepper and grated carrot. Cook for another 3-4 minutes until the vegetables are tender.
  4. Add soy sauce, sesame oil, salt, and black pepper to the mixture. Stir well and cook for an additional 2 minutes. Remove from heat and let the filling cool slightly.
  5. Prepare a shallow dish of warm water. Dip one rice paper wrap into the water for about 10 seconds until it softens, then lay it flat on a clean surface.
  6. Place 2-3 tablespoons of the mushroom filling in the center of the wrap. Fold the sides over the filling and roll it tightly from the bottom up to form a spring roll. Repeat with remaining wraps and filling.
  7. In a frying pan, heat enough coconut oil over medium heat to cover the bottom. Fry the spring rolls for 2-3 minutes on each side until golden brown and crispy.
  8. Remove from the pan and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
