Ingredients
- Shiitake mushrooms - 100 grams, chopped
- Button mushrooms - 100 grams, chopped
- Green bell pepper - 50 grams, finely diced
- Carrot - 50 grams, grated
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Rice paper wraps - 4 sheets
- Coconut oil - for frying
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat 1 teaspoon of coconut oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant.
- Add chopped shiitake and button mushrooms to the skillet. Cook for 5-7 minutes until they release their moisture and start to brown.
- Stir in the diced green bell pepper and grated carrot. Cook for another 3-4 minutes until the vegetables are tender.
- Add soy sauce, sesame oil, salt, and black pepper to the mixture. Stir well and cook for an additional 2 minutes. Remove from heat and let the filling cool slightly.
- Prepare a shallow dish of warm water. Dip one rice paper wrap into the water for about 10 seconds until it softens, then lay it flat on a clean surface.
- Place 2-3 tablespoons of the mushroom filling in the center of the wrap. Fold the sides over the filling and roll it tightly from the bottom up to form a spring roll. Repeat with remaining wraps and filling.
- In a frying pan, heat enough coconut oil over medium heat to cover the bottom. Fry the spring rolls for 2-3 minutes on each side until golden brown and crispy.
- Remove from the pan and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
