Ingredients

  • Shiitake mushrooms - 100 grams, sliced
  • Button mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable broth - 500 ml
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Cilantro - a handful, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Heat sesame oil in a pot over medium heat and sauté minced garlic and grated ginger until fragrant.
  2. Add sliced shiitake and button mushrooms to the pot, cooking for about 5 minutes until they soften.
  3. Pour in the vegetable broth and bring to a boil, then reduce to a simmer for 15 minutes.
  4. Stir in soy sauce, and season with salt and black pepper to taste.
  5. Ladle the soup into bowls and garnish with chopped green onions and cilantro before serving.
