Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Salt - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh mushrooms (shiitake or button) - 150 grams, chopped
  • Scallions - 4, finely sliced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oil for frying - as needed

Steps

  1. In a bowl, mix the all-purpose flour and salt, then gradually add the warm water to form a dough. Knead until smooth, cover with a damp cloth, and let it rest for 15 minutes.
  2. In a skillet over medium heat, add 2 tablespoons of vegetable oil. Add the chopped mushrooms and sauté for 5 minutes until softened.
  3. Add the scallions to the skillet and cook for another 2 minutes. Stir in soy sauce, sesame oil, and black pepper. Remove from heat and let it cool slightly.
  4. Divide the rested dough into 2 equal pieces. Roll each piece into a thin circle on a floured surface.
  5. Place half of the mushroom and scallion mixture on one half of each dough circle, leaving a border. Fold the dough over to create a half-moon shape and seal the edges by pressing with your fingers.
  6. Heat oil in a frying pan over medium heat. Fry each pie for about 4-5 minutes per side or until golden brown and crispy.
  7. Remove from the pan and drain on paper towels. Serve warm.
