- Button mushrooms - 200 grams, finely chopped
- Shiitake mushrooms - 100 grams, finely chopped

- Ginger - 1 teaspoon, minced
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons (low sodium if preferred)
- Sesame oil - 1 tablespoon
- Carrot - 1 small, grated
- Red bell pepper - 1, finely chopped
- Lettuce leaves (butter or iceberg) - 8 large leaves
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, toasted (for garnish)
Steps
- Heat sesame oil in a large skillet over medium heat.
- Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Add finely chopped button and shiitake mushrooms, and cook for 5-7 minutes until they release their moisture and start to brown.
- Stir in the grated carrot and chopped red bell pepper; cook for an additional 3-4 minutes until vegetables are tender.
- Pour in the soy sauce and add chopped green onions. Mix well and cook for 2 more minutes.
- Season with salt and black pepper to taste, then remove from heat.
- To serve, spoon the mushroom mixture onto the center of each lettuce leaf, wrap them up, and garnish with toasted sesame seeds.
