Ingredients

  • Button mushrooms - 200 grams, finely chopped
  • Shiitake mushrooms - 100 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons (low sodium if preferred)
  • Sesame oil - 1 tablespoon
  • Carrot - 1 small, grated
  • Red bell pepper - 1, finely chopped
  • Lettuce leaves (butter or iceberg) - 8 large leaves
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, toasted (for garnish)

Steps

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
  3. Add finely chopped button and shiitake mushrooms, and cook for 5-7 minutes until they release their moisture and start to brown.
  4. Stir in the grated carrot and chopped red bell pepper; cook for an additional 3-4 minutes until vegetables are tender.
  5. Pour in the soy sauce and add chopped green onions. Mix well and cook for 2 more minutes.
  6. Season with salt and black pepper to taste, then remove from heat.
  7. To serve, spoon the mushroom mixture onto the center of each lettuce leaf, wrap them up, and garnish with toasted sesame seeds.
