Ingredients
- Jasmine rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Mushrooms (button or shiitake) - 200g, sliced
- Carrot - 1 medium, diced
- Green peas - 1/2 cup (75g)
- Bell pepper (any color) - 1/2 medium, diced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Vegetable oil - 1 tablespoon (15ml)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Combine the rice with 2 cups of water in a pot and bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer for 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
- While the rice is cooking, heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger to the skillet and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook for about 5 minutes until they are browned and have released their moisture.
- Stir in the diced carrot, green peas, and bell pepper. Cook for another 3-4 minutes until the vegetables are tender.
- Add the cooked rice to the skillet along with the soy sauce, sesame oil, and chopped green onions. Stir well to combine all ingredients.
- Season with salt and black pepper to taste, and stir-fry for an additional 2-3 minutes until everything is heated through.
- Remove from heat and serve hot, garnished with additional green onions if desired.
