Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Shiitake mushrooms - 100 grams, finely chopped
  • King oyster mushrooms - 100 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Seaweed flakes (nori or dulse) - 1 tablespoon, crumbled
  • Green onions - 2, finely chopped
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and water. Knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
  2. In a skillet over medium heat, add a splash of water and sauté the minced garlic and grated ginger until fragrant.
  3. Add the finely chopped shiitake and king oyster mushrooms to the skillet, and cook until they release their moisture and become tender, about 5-7 minutes.
  4. Stir in the soy sauce, seaweed flakes, chopped green onions, sesame oil, black pepper, and salt. Mix well and cook for an additional 2 minutes. Remove from heat and let the filling cool.
  5. Divide the dough into small balls (about 20 grams each). Roll each ball into a thin circle on a lightly floured surface.
  6. Place a teaspoon of the mushroom filling in the center of each dough circle. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly.
  7. Bring a steamer pot of water to a boil. Place the dumplings in the steamer basket and steam for 10-12 minutes until cooked through.
  8. Serve hot with a dipping sauce made from soy sauce and a splash of sesame oil.
