- All-purpose flour - 200 grams
- Water - 100 ml
- Shiitake mushrooms - 100 grams, finely chopped
- King oyster mushrooms - 100 grams, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Seaweed flakes (nori or dulse) - 1 tablespoon, crumbled
- Green onions - 2, finely chopped
- Sesame oil - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and water. Knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
- In a skillet over medium heat, add a splash of water and sauté the minced garlic and grated ginger until fragrant.
- Add the finely chopped shiitake and king oyster mushrooms to the skillet, and cook until they release their moisture and become tender, about 5-7 minutes.
- Stir in the soy sauce, seaweed flakes, chopped green onions, sesame oil, black pepper, and salt. Mix well and cook for an additional 2 minutes. Remove from heat and let the filling cool.
- Divide the dough into small balls (about 20 grams each). Roll each ball into a thin circle on a lightly floured surface.
- Place a teaspoon of the mushroom filling in the center of each dough circle. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly.
- Bring a steamer pot of water to a boil. Place the dumplings in the steamer basket and steam for 10-12 minutes until cooked through.
- Serve hot with a dipping sauce made from soy sauce and a splash of sesame oil.
