Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 100 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed mushrooms (shiitake, button, or portobello) - 200 grams, sliced
  • Soy sauce (low sodium) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Red chili flakes - 1/2 teaspoon (optional)
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a food processor, pulse the cauliflower florets until they resemble rice. Transfer to a microwave-safe bowl and microwave for 4-5 minutes until soft.
  3. Let the cauliflower cool slightly, then place it in a clean kitchen towel and wring out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, shredded mozzarella cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  7. While the crust is baking, heat sesame oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until tender.
  8. Stir in the soy sauce and green onions, cooking for an additional 2 minutes. Remove from heat.
  9. Once the crust is ready, remove it from the oven and top it with the sautéed mushrooms. Sprinkle with red chili flakes if using.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes until heated through and slightly crispy.
  11. Remove from the oven, garnish with fresh cilantro, slice, and serve hot.
