Ingredients
- Cauliflower - 300 grams
- Shredded mozzarella cheese - 100 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mixed mushrooms (shiitake, button, or portobello) - 200 grams, sliced
- Soy sauce (low sodium) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Red chili flakes - 1/2 teaspoon (optional)
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (425°F).
- In a food processor, pulse the cauliflower florets until they resemble rice. Transfer to a microwave-safe bowl and microwave for 4-5 minutes until soft.
- Let the cauliflower cool slightly, then place it in a clean kitchen towel and wring out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, shredded mozzarella cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, heat sesame oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until tender.
- Stir in the soy sauce and green onions, cooking for an additional 2 minutes. Remove from heat.
- Once the crust is ready, remove it from the oven and top it with the sautéed mushrooms. Sprinkle with red chili flakes if using.
- Return the pizza to the oven and bake for an additional 5-7 minutes until heated through and slightly crispy.
- Remove from the oven, garnish with fresh cilantro, slice, and serve hot.
