Ingredients

  • Chicken breast - 200 grams, sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Button mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Chicken broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Spring onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cornstarch - 1 tablespoon (optional, for thickening)
  • Water - 200 ml

Steps

  1. In a pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  2. Add sliced chicken breast to the pot and cook until lightly browned, about 5 minutes.
  3. Stir in the sliced shiitake and button mushrooms, cooking for another 5 minutes until softened.
  4. Pour in the chicken broth and water, then bring to a boil. Reduce heat and let it simmer for 10 minutes.
  5. Add soy sauce, salt, and black pepper to taste. If desired, mix cornstarch with a little water to create a slurry and stir into the soup for thickening.
  6. Stir in chopped spring onions, and cook for an additional 2 minutes.
  7. Remove from heat and serve hot.
