- Chicken breast - 200 grams, sliced
- Shiitake mushrooms - 100 grams, sliced
- Button mushrooms - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Chicken broth - 500 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Spring onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Cornstarch - 1 tablespoon (optional, for thickening)
- Water - 200 ml
Steps
- In a pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
- Add sliced chicken breast to the pot and cook until lightly browned, about 5 minutes.
- Stir in the sliced shiitake and button mushrooms, cooking for another 5 minutes until softened.
- Pour in the chicken broth and water, then bring to a boil. Reduce heat and let it simmer for 10 minutes.
- Add soy sauce, salt, and black pepper to taste. If desired, mix cornstarch with a little water to create a slurry and stir into the soup for thickening.
- Stir in chopped spring onions, and cook for an additional 2 minutes.
- Remove from heat and serve hot.
