Ingredients
- All-purpose flour - 250 grams
- Active dry yeast - 7 grams
- Sugar - 10 grams
- Warm water - 150 ml
- Salt - 5 grams
- Olive oil - 15 ml
- Mushrooms (shiitake or button) - 200 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 15 ml
- Vegan cheese - 100 grams, shredded
- Fresh basil - a handful, chopped
- Cornstarch - 1 tablespoon for dusting
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a larger bowl, mix flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth. Place in a lightly oiled bowl, cover with a damp cloth, and let rise for 30 minutes.
- While the dough rises, heat a pan over medium heat. Add a splash of oil and sauté the minced garlic for 1 minute.
- Add the sliced mushrooms and soy sauce to the pan. Cook for about 5-7 minutes until mushrooms are tender and the liquid evaporates. Set aside.
- Once the dough has risen, punch it down and divide it into 2 equal pieces. Roll each piece into a circle about 1 cm thick.
- Dust a baking tray with cornstarch and place the dough circles on it. Preheat your oven to 220°C (428°F).
- Top each dough circle with the sautéed mushrooms and sprinkle with vegan cheese and fresh basil.
- Bake in the preheated oven for 15-20 minutes until the crust is golden and the cheese is melted.
- Remove from the oven, let cool slightly, and serve warm.
