- Active dry yeast - 5g
- Sugar - 10g
- Warm water - 120ml
- Salt - 1g
- Vegetable oil - 15ml
- Shiitake mushrooms - 150g, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 15ml
- Sesame oil - 5ml
- Green onions - 2, chopped
- Carrot - 1 small, grated
- Cilantro - a handful, chopped
- Pepper - to taste
Steps
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a separate bowl, mix flour and salt. Add the yeast mixture and vegetable oil, then knead until a smooth dough forms. Cover and let rise for 30 minutes.
- In a pan, heat a little oil over medium heat. Sauté garlic and ginger until fragrant.
- Add chopped shiitake mushrooms and grated carrot to the pan. Cook until mushrooms are tender, about 5-7 minutes.
- Stir in soy sauce, sesame oil, chopped green onions, cilantro, and pepper. Cook for another 2-3 minutes, then remove from heat.
- Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a ball, then flatten into a disc.
- Place a spoonful of the mushroom filling in the center of each disc. Gather the edges and pinch to seal the bun.
- Place the buns on a piece of parchment paper and steam them in a steamer for about 15-20 minutes until fluffy.
- Serve warm and enjoy your Mushroom Bao!
