Ingredients

  • All-purpose flour - 200g
  • Active dry yeast - 5g
  • Sugar - 10g
  • Warm water - 120ml
  • Salt - 1g
  • Vegetable oil - 15ml
  • Shiitake mushrooms - 150g, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 15ml
  • Sesame oil - 5ml
  • Green onions - 2, chopped
  • Carrot - 1 small, grated
  • Cilantro - a handful, chopped
  • Pepper - to taste

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a separate bowl, mix flour and salt. Add the yeast mixture and vegetable oil, then knead until a smooth dough forms. Cover and let rise for 30 minutes.
  3. In a pan, heat a little oil over medium heat. Sauté garlic and ginger until fragrant.
  4. Add chopped shiitake mushrooms and grated carrot to the pan. Cook until mushrooms are tender, about 5-7 minutes.
  5. Stir in soy sauce, sesame oil, chopped green onions, cilantro, and pepper. Cook for another 2-3 minutes, then remove from heat.
  6. Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a ball, then flatten into a disc.
  7. Place a spoonful of the mushroom filling in the center of each disc. Gather the edges and pinch to seal the bun.
  8. Place the buns on a piece of parchment paper and steam them in a steamer for about 15-20 minutes until fluffy.
