Ingredients

  • All-purpose flour - 250 grams
  • Yeast - 7 grams
  • Sugar - 10 grams
  • Salt - 5 grams
  • Warm water - 150 ml
  • Olive oil - 15 ml
  • Mushrooms (finely chopped) - 100 grams
  • Fresh spinach (chopped) - 100 grams
  • Garlic (minced) - 1 clove
  • Soy sauce - 15 ml
  • Sesame oil - 5 ml
  • Black pepper - to taste
  • Egg (for egg wash) - 1 (optional)

Steps

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Meanwhile, in a skillet, heat a little oil and sauté minced garlic until fragrant. Add chopped mushrooms and cook until softened, then add spinach and soy sauce. Stir until spinach wilts, season with black pepper, and let cool.
  5. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a round disc.
  6. Place a spoonful of the mushroom and spinach filling in the center of each disc. Fold the edges over the filling and pinch to seal.
  7. Place the buns seam-side down on a baking tray lined with parchment paper. Cover and let rise for another 20 minutes.
  8. Preheat the oven to 180°C (350°F). If using, beat the egg and brush it over the buns for a golden finish.
  9. Bake the buns for 15-20 minutes or until golden brown. Allow to cool slightly before serving.
