Ingredients

  • Almond flour - 150 grams
  • Psyllium husk - 10 grams
  • Baking powder - 5 grams
  • Salt - 2 grams
  • Egg - 1 large
  • Mozzarella cheese, shredded - 100 grams
  • Cream cheese - 50 grams
  • Mushrooms, finely chopped - 100 grams
  • Garlic, minced - 1 clove
  • Soy sauce - 10 ml
  • Green onions, chopped - 2 tablespoons
  • Black pepper - 1 gram
  • Olive oil - 10 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In a separate bowl, melt the mozzarella and cream cheese together in the microwave for about 30-40 seconds until soft and mix well.
  4. Add the egg to the cheese mixture and stir until combined, then gradually add the dry ingredients, mixing until a dough forms.
  5. In a skillet, heat olive oil over medium heat, then add minced garlic and chopped mushrooms. Sauté until the mushrooms are soft, about 5-7 minutes.
  6. Stir in soy sauce, green onions, and black pepper, then remove from heat and let cool slightly.
  7. Divide the dough into 4 equal portions and flatten each into a round disc.
  8. Place a spoonful of the mushroom filling in the center of each disc, fold the edges over, and pinch to seal. Shape into a ball.
  9. Place the bao on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  10. Remove from the oven and let cool for a few minutes before serving.
