- Bok Choy - 200 grams
- Mushrooms (shiitake or button) - 150 grams
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
Steps
- Wash the bok choy thoroughly and separate the leaves from the stems. Chop the stems into bite-sized pieces and leave the leaves whole.
- Clean the mushrooms by wiping them with a damp cloth and slice them into thin pieces.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms to the skillet and stir-fry for about 3-4 minutes until they are tender and slightly browned.
- Add the bok choy stems to the skillet and continue to stir-fry for another 2 minutes.
- Next, add the bok choy leaves, soy sauce, sesame oil, and red pepper flakes. Stir well and cook for an additional 2-3 minutes until the leaves are wilted.
- Remove from heat, sprinkle with chopped green onions and sesame seeds, and serve hot.
