Ingredients

  • Bok Choy - 200 grams
  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy Sauce (low sodium) - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Olive Oil - 1 tablespoon
  • Red Pepper Flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black Pepper - to taste
  • Green Onions - 2 stalks, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the bok choy thoroughly and cut it in half lengthwise.
  3. In a mixing bowl, combine the sliced mushrooms, minced garlic, grated ginger, soy sauce, sesame oil, olive oil, red pepper flakes, salt, and black pepper.
  4. Place the bok choy halves in a baking dish, cut side up, and arrange the mushroom mixture over the bok choy.
  5. Cover the baking dish with aluminum foil to keep moisture in and bake for 20 minutes.
  6. After 20 minutes, remove the foil and bake for an additional 10 minutes to allow the mushrooms to brown slightly.
  7. Remove from the oven, and garnish with chopped green onions before serving.
