- Bok Choy - 200 grams
- Mushrooms (shiitake or button) - 150 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy Sauce (low sodium) - 2 tablespoons
- Sesame Oil - 1 tablespoon
- Olive Oil - 1 tablespoon
- Red Pepper Flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black Pepper - to taste
- Green Onions - 2 stalks, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the bok choy thoroughly and cut it in half lengthwise.
- In a mixing bowl, combine the sliced mushrooms, minced garlic, grated ginger, soy sauce, sesame oil, olive oil, red pepper flakes, salt, and black pepper.
- Place the bok choy halves in a baking dish, cut side up, and arrange the mushroom mixture over the bok choy.
- Cover the baking dish with aluminum foil to keep moisture in and bake for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 10 minutes to allow the mushrooms to brown slightly.
- Remove from the oven, and garnish with chopped green onions before serving.
