Steps

  1. Rinse the mung bean sprouts under cold water and drain well.
  2. In a medium-sized pan, heat the sesame oil over medium heat.
  3. Add the minced garlic and grated ginger to the pan, sautéing for about 1 minute until fragrant.
  4. Add the mung bean sprouts to the pan and stir-fry for 2-3 minutes until they are slightly tender but still crisp.
  5. Pour in the soy sauce, rice vinegar, and chili oil, and toss to coat the sprouts evenly.
