Steps

  1. Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
  2. Drain the soaked mung beans and place them in a pot with 1 liter of fresh water.
  3. Bring the water to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the mung beans are soft.
  4. Add the grated ginger, salt, and coconut milk to the pot, stirring well to combine.
  5. Simmer for an additional 5 minutes to allow the flavors to meld.
